COCONUT PANNA COTTA


Ingredients
  1. 4 tsp. unflavored gelatin
  2. 6 tbsp. cold water
  3. 4 cups canned coconut milk (full fat)
  4. ⅓ cup granulated sugar
  5. 1 tbsp. pure vanilla extract or paste
Instructions
  1. In a small bowl, whisk together gelatin and cold water. Let it sit for 5-10 minutes.
  2. In a saucepan bring coconut milk and sugar to a simmer, whisking frequently, until dissolved. Remove from the heat and whisk in vanilla extract or paste.
  3. Pour hot coconut milk mixture into the bowl with the gelatin and whisk until completely incorporated. Pour into dessert glasses and refrigerate at least 4 hours, until firm.
  4. Serve with fresh figs or dry roses.
